Chicken Parmesan

My husband is often not home to cook meals, but his Chicken Parmesan is a meal that he makes when he is home.  He recently made a comment how mine isn’t as good as his.  Clearly, he forgot who he was talking to because I love a challenge.  Even he had to admit that this Chicken Parmesan is definitely better than his.  Plus, it’s an easy meal thanks to Ragu® Spaghetti Sauce.

As many of you know I’m no longer working as a teacher, which means that I get to work from home with my two little darlings.  Yep, that’s Avery telling me what we should be doing, rather than what we’re actually doing.  Since Riley started kindergarten this year, I only have Avery with me all day while I try to keep up with the house and my business.  We’re still working out the kinks in our schedule since Avery is used to having a playmate 24/7, but we’ll get there.  With my husband’s crazy hours, shopping trips to BJ’s are necessary so that I don’t have to spend as much time grocery shopping because I can stock up on items.

The secret to my Chicken Parmesan is the prep.  I accidentally learned a way to make the chicken a bit crispier.  I say accidentally because I was prepping these one night and the chicken fell off the fork and into the wrong bowl, but it turned out that the chicken that fell off was the crispiest.  The trick is that I use the egg wash twice.  I start by using a meat tenderizer to get the chicken thinner and I then pepper and salt it.  I first dunk the chicken into the egg wash and then into the flour to coat both sides, but this is where I had my oops moment and it turned out amazing.  I go back to the egg wash from the flour and then end in the bread crumbs.  It was the happiest accident I’ve ever had!

It gives the chickens two layers of crunch, which doesn’t get lost when they are baked.  I like a crispy chicken parmesan and the two layers {one of flour and one of panko bread crumbs} gives it just that.

The second trick that I have for getting that crispy bite is that I fry the breasts in olive oil before I put them in the baking dish to go into the oven.  You can just see that golden brown color at it’s finest and believe me it makes the kitchen smell so good.  Plus, since Ragu® is so easy to use I can take the extra time to fry the chicken before baking them.  It’s all about making life easier, while still having great flavor in your food.

I place a thin layer of Ragu® sauce on the bottom of the pyrex baking dish and then I pour another thin layer on top of the chicken.  The finishing touch is mozzarella and parmesan on top of the chicken to pop into the oven to bake so that the cheese melts.  It’s ooey gooey perfection and this mom scores a win for flavor and ease of preparation!

A quick, yet flavorful and crispy chicken parmesan that is the perfect weeknight meal.
Ingredients
  • 4 chicken breasts
  • 2 eggs for egg wash
  • 1/4 cup flour
  • 1/4 cup panko bread crumbs
  • 1 tablespoon Italian seasoning
  • salt & pepper to taste
  • 2 tablespoons olive oil
  • 1-2 cups Ragu® Sauce
  • 1/2 cup mozzarella cheese
  • 2 tablespoons parmesan cheese
Instructions
  1. Preheat the oven to 350 F.
  2. Using a meat tenderizer, make the chicken breasts equal thickness so that they will cook evenly.
  3. Pepper & salt both sides of the chicken breasts.
  4. Set up 3 bowls one with the egg wash, one with the flour, and one with the panko bread crumbs with the Italian seasoning mixed in.
  5. Place a skillet on medium to high heat and pour in the olive oil.
  6. Dunk each chicken breast into the egg wash then into the flour and back to the egg wash to finally go into the panko crumbs.
  7. Once the skillet is hot place the chicken breasts into the skillet and cook 5-6 minutes on each side so that there is a golden brown crisp.
  8. Pour a thin layer Ragu® Sauce into the bottom of a baking dish and place the cooked chicken breasts on top.
  9. Pour another thin layer of Ragu® Sauce on top of each chicken breast and sprinkle with the mozzarella and parmesan cheese.
  10. Bake in the preheated oven for 10 -15 minutes.
  11. Serve over pasta or by itself with a salad.
