At this point you’ve seen a growing trend at our house. I’m a huge fan of just about anything apple. I do love apple recipes, don’t get me wrong, but there’s something behind this. Don’t yell, but I’m not a fan of pumpkin recipes. Pumpkin reminds me of the consistency of bananas, which I also cannot handle. I know, crazy! I have a huge love of apple cider donuts so I created an easy Apple Cider Donut Muffin that is finger looking good!
Apple Cider Donut Muffins
Since our house is always busy with a preschooler running around and a newborn that came into the mix in May, I’m all about making my treats semi-homemade. My motto is “Why reinvent the wheel?” It’s all about getting a little creative to make the dessert that much tastier. For these Apple Cider Donut Muffins, I used Betty Crocker’s Apple Cake Mix and substituted spiced apple cider for the water that that the cake mix calls for. I then prepared the mix according to the box directions and baked the mix as cupcakes, rather than cake.
The finishing touch for these muffins was the cinnamon sugar topping. Once the muffins are completely cooled, melt two tablespoons of butter and dip each muffin into the melted butter. Then roll the dipped muffin in cinnamon sugar. They taste just like Apple Cider Donuts except they are so much healthier.
