My husband and I recently got away without our girls for a friend's wedding in Delray Beach, Florida.  The weather was amazing, but more importantly so was the food!  I am a happy girl when I can go somewhere warm and can be guaranteed amazing food every place we go.  One morning we slept in {yep, you can do that with no kids} so we went out for brunch and there was this cute crepe restaurant.  All they served was crepes.  My husband was bit skeptical, but once he saw bacon and sausage on the menu, he gave in to my little girl squealing.  It was everything I hoped for and made me really rethink crepes.

Crepes are so much easier to make than I expected.  They were honestly easier to make than pancakes because as long as you use a little vegetable oil before pouring the batter, they flip super easily and they're so much faster.  Plus, you can add Smithfield Breakfast Sausage in Bacon flavor and smoked gouda as the filling.  Oh, and let's not forget the sweet flavor of the raspberry compote topping.  These bacon gouda crepes with raspberry compote are amazing and definitely the perfect brunch recipe for any occasion.  Plus, you'll have everyone thinking you slaved all morning, when in reality you were in and out.

Bacon Gouda Crepes with Raspberry Compote

Ingredients

  • 1 cup flour
  • 2 eggs
  • ½ cup water
  • ½ cup milk
  • ¼ tsp salt
  • 1 package Smithfield Breakfast Sausage Patties bacon flavor
  • 1 tsbp flour
  • ¾ cup heavy cream
  • ¾ cup smoked gouda shredded
  • 2 cups fresh raspberries
  • ⅓ cup sugar
  • 1 tsp lemon juice

Instructions

  • In a large bowl combine the flour, eggs, milk, water and salt and mix well.
  • Heat a medium size skillet and add a thin layer of vegetable oil to the pan and add about a ¼ cup of the crepe batter to the pan. You want a thin layer all around the pan. Heat the batter in the pan for about 3-4 minutes and then flip and repeat on the other side. Repeat for each crepe and lay each one aside for the filling.
  • Meanwhile, for the bacon gouda filling, crumble the breakfast sausage in bacon flavor in a saute bacon. Cook through and then add 1 tablespoon of flour to the pan with the cooked sausage. Add the heavy cream and mix into the flour. Add the shredded smoked gouda to the sausage and cream mixture. Spread the gouda mixture down the center of each crepe and roll the crepe up.
  • For the raspberry compote, in a small saucepan heat the raspberries, sugar and lemon juice over medium high heat stirring constantly. Spoon the raspberry compote over the top of the bacon gouda crepes and serve.
