Peanut Butter Apple Cereal Bars

With back to school just around the corner {I know my NY friends are giving themselves a face palm since they just go out}, but here in the south school starts in August so it’s time to get ready.  One of the toughest meals for me to get my girls to eat is breakfast so I made these Peanut Butter Apple Cereal Bars that are gluten free and low in sugar.

I survived all last year on cereal bars first thing in the morning, but I found out something recently….{whisper voice} they’re loaded with sugar.  I know!  You mean the cereal bars with the fruit on them?!  Yep!  It was total disappointment for me, but I knew I could come up with an easy solution so I combined my girls love of peanut butter and apples.  Plus, who doesn’t love an apple recipe in the fall?

These take fifteen minutes to prep and fifteen minutes to bake and you’re good to go with breakfast for the week.  Or, they’ll at least last two days if you’re anything like me.  I have a tendency to sneak one or two or four {FINE!} of these throughout the day as my healthy snack. Can you tell I’m taking a week off from 21 day fix?  I’ll start back up next week and these will be one of my orange containers and half a purple.

I had rugrats sneaking peaks of these while I was trying to take the photos so I let them grab a bite before they even made their way to a container.  Avery cautiously watched her big sister to see if she gave the approval sign.

Peanut Butter Apple Cereal Bars

Simple, yet delicious Peanut Butter Apple Cereal Bars that make the perfect on-the-go healthy snack.

Prep Time 15 minutes
Cook Time 15 minutes
Total Time 30 minutes


  • 4 cup Chex Mix Apple Cinnamon Cereal
  • 1 cup rolled oats
  • 1/2 cup dried apples chopped
  • 1/2 cup peanut butter chips
  • 2 tbsp agave syrup
  • 2 tbsp peanut butter
  • 2 egg whites


  1. Preheat the oven at 350 F and grease a non stick 8 x 8 dish. In a large bowl crush the apple cinnamon chex mix with your hands and add in the rolled oats, peanut butter chips and dried apples.

  2. In a separate microwavable bowl combine the agave syrup and peanut butter and warm in the microwave on high for 40 seconds.

  3. Add in the egg whites to the warmed liquid mixture and mix well. Pour the liquid mixture over the dry ingredients and mix well until everything is well combined.

  4. Press the cereal mixture into the greased 8 x 8 dish and cook for 15 minutes at 350 F.

  5. Let the bars cool and then cut to your desired size. Eat immediately or store in a airtight container.
