Strawberry Cake

I have a deep love for Strawberry once the Spring hits, which you’ve probably noticed from my Strawberry Cream Puff Pastry, Strawberry Pie and Strawberry Lemon Spring Cupcakes.  Today I’m sharing this gorgeous Strawberry Cake to shower my sweet friend Cathy from Lemon Tree Dwelling for her virtual baby shower.  This recipe is semi-homemade, BUT one of the main ingredients is my Strawberry Jam without Pectin.  So good!

I haven’t had a chance to plan and participate in many boy baby showers because we seem to be surrounded by girls.  Luckily, Cathy is also having a girl so coming up with a dessert that was girlish was a cinch.  I have a tendency to stick with pink as you probably remember from the Teddy Bear Baby Shower that I threw for my sister-in-law that was complete with Monthly Onesies and an Infant Tutu as a gift.   When I go girl, I have a tendency to go very girly!


For this cake you’ll need Betty Crocker Super Moist French Vanilla Cake Mix.  I usually make my cakes ahead of time so that I can freeze them overnight.  I just find it so much easier to frost an almost thawed cake.  For this cake I didn’t and I learned that quickly sticking the cake into the freezer half frosted can actually save a cake that is falling apart.  Plus, the icing is so much easier to smooth out when it’s so cold.  You learn something new everyday!

French Vanilla Cake with Strawberry Frosting

I used my Strawberry Jam in between the two 8 inch cakes as well as in the vanilla frosting.  Oh my goodness so good!  Plus, you know that I’m all about easy and this couldn’t get any easier!

A semi-homemade Strawberry Cake perfect for any occasion.
  • Betty Crocker Super Moist French Vanilla Cake Mix
  • 1 1/4 cups water
  • 1/3 cup vegetable oil
  • 3 eggs
  • Strawberry Jam as filling between layers
  • Strawberry Frosting
  • 1 stick {1/2 cup} butter softened
  • 1/4 cup heavy cream at room temperature
  • 1 teaspoon vanilla extract
  • 3 cups of confectioners sugar
  • 3 tablespoons Strawberry Jam
  1. Preheat the oven at 350 and grease the sides and bottom of 2 8 inch pans.
  2. Mix the cake according to the directions on the box.
  3. While the cake is baking and then cooling prepare the frosting.
  4. Cream together the butter, heavy cream and vanilla extract.
  5. Add in 2 cups of the confectioners sugar and mix together until smooth.
  6. Add in the 3 tablespoons of strawberry jam and the last cup of confectioners sugar and mix until smooth and fluffy.
  7. To assemble the cake:
  8. Place a medium amount of Strawberry Jam in between the two layers of the cake. Frost the outside of the cake and finish with the top.
  9. Finish with a fresh strawberry cut into strips, but still combined by the stems.
