Southern Cole Slaw
A Southern Cole Slaw that combines a traditional cole slaw with a southern taste of pineapple and kiwi.
- 1/2 head cabbage thinly sliced
- 1/4 head red cabbage thinly chopped
- 2 carrots peeled
- 1/2 cup mayonnaise
- 2 tbsp sugar
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 kiwi thinly sliced
- 1/2 pineapple cut into chunks
Prepare the carrots, green and red cabbage and combine in a large mixing bowl.
In a separate bowl create the dressing by mixing together the mayonnaise, sugar, celery seed and distilled vinegar.
Pour the mixture over the combined cabbages and carrots and toss to coat.
Place the pineapple and kiwi on top of the cole slaw around the outside.
Refrigerate for at least an hour before serving.
