Creamy Cucumber Salad

A simple cucumber salad that is ready in 10 minutes

Ingredients

  • 1 Cucumber Medium Sized
  • 1/2 cup Mandarin Oranges I used the canned wedges
  • 1.5 cup Greek Yogurt That's about two 5.3oz containers
  • 2 stems Tarragan finely chopped
  • 4 stems Oregano finely chopped
  • 1/4 Red Onion jullinned
  • 1 tsp Salt adjust to taste
  • 1 tsp Black Pepper optional

Instructions

  • Cut the cucumber into thin triangles (Cut the rounds into 4 pieces)
  • Place in a large glass bowl
  • Add the mandarin and red onions to the bowl
  • Add the salt and pepper
  • Chop the tarragon and oregano before adding to the bowl
  • Add the yogurt immediately to prevent the herbs from browning
  • Use 2 wooden spoons to mix everything really well
  • Cover with plastic wrap and refrigerate until ready to serve

Notes

- Tarragon browns easily, so, don't chop it until you are ready to put it into the bowl with other ingredients. 
- This whole salad will stay delicious for about a week, if refrigerated.  Do not peel the skin of the cucumber to keep them crispy
