Whipped Goat Cheese and Avocado Breakfast Toast

- 2 slices sourdough bread lightly toasted
- 1 large avocado
- 4 oz goat cheese room temperature
- 2 tbsp olive oil
- ½ tsp kosher salt
- ½ tsp pepper
- 1 large peach sliced
- 1 apricot sliced
- 2 tbsp micro greens
To the bowl of your food processor or blender, add the avocado, goat cheese, olive oil, salt, and black pepper. Pulse until smooth, creamy, and whipped.
Spread the avocado mixture on the toasts. Top with fresh peach and apricot slices.
Drizzle the toasts with balsamic vinegar and sprinkle with additional black pepper if desired. Top with micro green and enjoy immediately.
