Strawberry Shortcake Ice Pops
A refreshing ice pop that tastes just like the decadent dessert, strawberry shortcake.
- 8 oz cream cheese softened
- 2 eggs
- 1 cup brown sugar
- 1 tsp vanilla extract
- 2 tbsp flour
- ½ tsp baking powder
- ¼ tsp salt
- 16 oz frozen strawberries thawed
- 2 tbsp strawberry jam
- 8 oz cool whip
- popsicle mold
Beat together the cream cheese, brown sugar, vanilla extract, flour, baking powder and salt in a large mixing bowl.
In a food processor puree the thawed strawberries with the strawberry jam.
Fold in the strawberry puree and cool whip until everything is well mixed.
Pour the mixture into a popsicle mold and freeze for 6 or more hours.
