  • 5-6 apples cored, peeled & chopped
  • ¾ cup sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp salt
  • 1 tbsp butter melted

  • Pillsbury Refrigerated Pie Crusts

  • Layout your pie crusts and use a cookie cutter to cut out the circles for the cookies.
  • Lay the cut out cookies on parchment paper in order to be topped with the apple pie filling.
  • For the apple pie filling combine the chopped apples, sugar, cinnamon, nutmeg, salt and butter in a medium bowl to combine.
  • Scoop about a tablespoon of apple pie filling into the center of the cut out pie crusts.
  • Cover the apple pie filling with another cookie cut pie crust. I also used a heart shaped cookie cutter to cut open the tops of the cookies.
  • Use a fork to pinch the two pie crusts together to make a cookie.
  • Sprinkle with cinnamon and sugar. Bake at 450 for 10 - 15 minutes
  • This made sixteen cookies, which left me with leftover apple pie filling which can be used in numerous other recipes or canned for future use.
