A light and healthy cucumber dip recipe with feta.

¼cuplow fat sour cream
¼ feta cheesecrumbled
sprigs of fennel fronds
In a medium size bowl, combine the Greek yogurt, sour cream, feta cheese, red onion, lemon juice and salt. Chill for one hour in the refrigerate.
Wash the cucumber and cut both ends off then grate the cucumber. Place in a colander over a sink and lightly salt to remove the moisture. Let sit for 20 minutes. Finally, squeeze the excess water from it.
Mix in the grated cucumber to the chilled dip.
Garnish with pomegranate and fennel fronds. Serve with Crunchmaster crackers.
