For the Avocado Layer
- 1.5 Avocado
- 3 Tbsp Coconut Milk Full Fat
- 2 Tbsp Maple Syrup Grade A Dark Amber
- 1 drop Vanilla Essence Optional
For the Chocolate Layer
- 2.5 Tbsp Unsweetened Cocoa Powder
- 1/4 cup Coconut Milk Full Fat
- 1/8 tsp Salt Optional
- 1/4 cup Maple Syrup Grade A Dark Amber
- 2 drop Vanilla Essence
The Avocado Layer
In a blender or food processor, add the ingredients for the avocado ice cream layer
Blend on slow until its a creamy consistency
Transfer to a 5" by 3" bread pan
Tap the bread pan on a flat surface to level the avocado layer
Using the back of a spoon, smooth out the top of the avocado ice cream
Cover with wax paper and refrigerate while you make the chocolate layer
The Chocolate Layer
Place all the chocolate layer ingredients in a blender and blend until creamy
Give it a quick taste. If it tastes bitter, add 1 Tbsp more maple syrup
Remove the wax paper from the bread pan
Gently pour over the avocado layer
Cover with wax paper and freeze
Freeze overnight before serving
