You can cook the chicken several ways — stovetop, crockpot, multi-cooker, Instant Pot, or grill. Use the Instant Pot cooking method to save time. The other cooking methods can produce excellent cooking results, but you’ll need to time your cooking session so that the meat will be ready to use when you are ready to build your burrito(s). For this recipe, we used a multi-cooker.
Remove the chicken from the package and give each piece a thorough wash, removing any fatty tissue. Place them in the multi cooker basin.
Add the chicken broth and spices.
Set the multi-cooker to cook for 4 hours on the High setting.
Heat your grill pan
This step is for the tortillas, which will be easier to fold once they are warm. Heat the pan while you shred the chicken. By the time you’re finished with the shredding, the pan will be hot enough to soften the tortillas.
Place some shredded chicken onto the tortilla.
Add the cheese.
Add the red onions.
Add the salsa.
Add the tomatoes.
Finish with guacamole and sour cream.
Roll up the burrito.
Fold the sides and press them into the guacamole and sour cream so that they'll stay.
Take the open end closest to you and position it on top of the opposite end. Then use both hands and roll it away from you. the result should look like this.
