Instructions
Layout your pie crusts and use a cookie cutter to cut out the circles for the cookies.
Lay the cut out cookies on parchment paper in order to be topped with the apple pie filling.
For the apple pie filling combine the chopped apples, sugar, cinnamon, nutmeg, salt and butter in a medium bowl to combine.
Scoop about a tablespoon of apple pie filling into the center of the cut out pie crusts.
Cover the apple pie filling with another cookie cut pie crust. I also used a heart shaped cookie cutter to cut open the tops of the cookies.
Use a fork to pinch the two pie crusts together to make a cookie.
Sprinkle with cinnamon and sugar.
Bake at 450 for 10 - 15 minutes
This made sixteen cookies, which left me with leftover apple pie filling which can be used in numerous other recipes or canned for future use.
