Bacon Pulled Pork Sandwiches Recipe

Ingredients

  • 3-5 lb pork butt or shoulder
  • 14 oz beef broth
  • ¼ cup brewed coffee
  • 3 cloves garlic
  • 1 tbsp liquid smoke
  • 16 strips bacon
  • 1 cup shredded red cabbage
  • ¼ cup shredded carrots
  • 1 tbsp minced onion
  • ¼ cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tbsp sugar
  • ½ tsp extra virgin olive oil
  • 8 sandwich rolls

Instructions

  • Prepare the slaw by combining the cabbages, carrots and onion.
  • Add in the mayonnaise, vinegar, sugar and oil and mix well.
  • Refrigerate the slaw while the pulled pork cooks in the slow cooker.
  • 20 minutes before serving cook the bacon so that it is crispy.
  • On each roll place the pulled pork, two slices of bacon and cole slaw.
    Makes 8 -12 servings depending upon the size of the pork.
