Ingredients

  • Non-stick cooking spray
  • 3 ripe bananas mashed
  • ¼ cup of melted unsalted butter
  • ¼ cup of whole milk
  • 1 large egg about 2 oz.
  • 1 teaspoon of pure vanilla extract
  • ½ cup of brown sugar
  • ½ cup of granulated sugar
  • 2 cups of all-purpose flour
  • 1 teaspoon of salt
  • 1 teaspoon of baking soda
  • 1 cup of chopped walnuts plus extra for muffin toppings before baking (optional)

Instructions

  • Preheat the oven to 350°F. Grease the muffin tin using non-stick spray.
  • In a large bowl, combine mashed bananas, melted butter, and milk.
  • To this mixture, add the egg, vanilla extract, and sugars.
  • Gently fold in the dry ingredients and walnuts to form the batter.
  • Fill the muffin cups up to ⅘ full. Add extra walnuts on top, if you wish.
  • Bake the muffins for 18 to 20 minutes, or until a toothpick inserted into a muffin comes out clean.
  • Allow the muffins to cool for 5 to 10 minutes before serving.
