Cherry Clafoutis

Ingredients

  • 1 tbsp unsalted butter room temperature
  • 2 cups fresh pitted cherries or a 12-oz. bag of frozen cherries, thawed and drained
  • 1 tbsp white sugar for macerating
  • ½ cup white sugar for the batter
  • 1 to 2 tbsp almond-flavored liqueur such as amaretto, optional
  • 3 large eggs
  • cup whole milk
  • 2 tsp real vanilla extract
  • 1 tsp almond extract
  • 1 cup all-purpose flour
  • cup slivered almonds
  • Powdered sugar for dusting

Instructions

  • Preheat oven to 350°F and butter a medium-sized baking dish.
  • If using frozen cherries, thaw and drain. Place the cherries in a medium-sized container and add 1 tablespoon of sugar.
  • Add 1 to 2 tablespoons of almond-flavored liqueur (if desired) or gently press the cherries to release the remaining liquid. Toss and set aside.
  • Place the top oven rack in the center position and preheat your oven to 350°F.
  • In a blender, combine eggs, milk, vanilla extract, almond extract, flour, and the rest of the sugar. Pulse until just foamy.
  • Arrange the cherries in the baking dish you greased earlier. Pour the batter over them and sprinkle with almonds.
  • Bake for 40 to 45 minutes. Cool for 15 minutes and dust with powdered sugar before serving.
