Coconut Curry Soup Recipe

Ingredients

  • 1.5 lbs of carrots peeled and sliced
  • 1 stalk of celery peeled and chopped
  • 1 clove of garlic
  • 1 tsp of cumin powder
  • 2 cups 40cl of coconut milk
  • 1 inch of ginger peeled and grated
  • 1 red chili pepper sliced
  • A tbsp of fresh cilantro chopped
  • Salt and pepper

Instructions

  • Put the carrots, celery, garlic, cumin and a teaspoon of coarse sea salt in a large pot.
  • Fill the pot with enough cold water to cover the mixture.
  • Heat on high heat for 30 minutes.
  • Remove from heat.
  • Pour in the coconut milk.
  • Add the ginger and half a teaspoon of ground black pepper.
  • Mix with a hand blender.
  • Heat until it boils.
  • Top with spicy red pepper and cilantro to serve.
