Ingredients
1 ½cupchicken broth
1cupuncooked quinoarinsed
¼cupred bell pepperchopped
¼cupyellow bell pepperchopped
⅓cupred onionfinely chopped
1tspcurry powder
½tspcumin
1tspsugar
¼cupchopped fresh cilantro
2limesjuiced
⅓cuptoasted sliced almonds
½cupshredded carrotschopped fine
½cupdried cranberries
2-3green onionschopped
Instructions
Pour chicken broth into pan and bring to boil. Add quinoa, cover, reduce heat and simmer for 15-20 minutes or until liquid is absorbed. Fluff with fork and chill.
Add chilled quinoa into a bowl and add in remaining ingredients.
