Cucumber Dip Recipe

This easy cucumber dip recipe uses avocado to add some thickening texture, plus some red onion, lime juice, garlic, and cilantro to create a mellow guacamole with a refreshing aftertaste.

Ingredients

  • 1 small cucumber — peeled de-seeded, and coarsely chopped or sliced
  • 2 ripe avocados — pitted peeled, and coarsely chopped
  • 1 red onion — 1 to 3 sliced rings
  • 1 dollop of sour cream or mayo
  • 1 tsp of lime juice
  • 1 garlic clove chopped coarsely or 1 tablespoon of jarred chopped garlic
  • 1 T fresh or dry cilantro leaves

Instructions

  • Peel, pit, and chop avocado. Add to blender or food processor.
  • Add 1 to 3 rings of sliced red onion to avocado.
  • Add the garlic.
  • Add the cilantro, followed by the lemon juice.
  • Peel, seed, and chop cucumber coarsely.
  • Dump the slices on top of the other vegetables.
  • Put the lid on your blender or food processor and pulse until you get the blend consistency that you want.
  • Dump the mixture into a Tupperware bowl and give it a stir to make sure that you don’t have any unwanted chunks.
  • Seal the bowl, place it in the refrigerator, and let the cucumber dip set for at least an hour.
  • Remove the dip from the refrigerator and give it a taste test with a chip or carrot stick.
  • Add the sour cream or mayo to achieve a creamy effect, or eat it as is.
