¾cupmelted coconut oil
1cuphoney
2eggs
½tspsalt
2tspvanilla
1tspbaking powder
3cupswhole wheat flour
1cuprolled oats
1cupsunflower seeds
1 ½cup nutschopped
2cupraisins, dried cranberries
Instructions
Preheat oven to 375 degrees F. In a large mixing bowl, use an electric mixer to cream together oil and honey. Add eggs, salt, and vanilla.
Slowly add baking powder, flour, and oats. Mix until just combined. Stir in seeds, nuts, and dried fruit.
Drop by tablespoonful onto a cookie sheet. Bake 10 minutes, or until just golden brown. Cool on wire rack and then store in airtight containers. Enjoy!
