Ingredients

  • 1 & ½ pounds pork boneless loin country-style ribs
  • salt and pepper
  • ½ cup honey
  • 2 tablespoons seasoned rice vinegar
  • ½ cup chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon hoisin sauce
  • 2 & ½ tablespoons tomato paste
  • 4 cloves garlic finely minced
  • 2 teaspoons ground ginger
  • 2 tablespoons cornstarch
  • 2 tablespoons chicken broth
  • 1 tablespoon toasted sesame oil
  • 1 bag Asian slaw mix
  • tortilla shells or hamburger buns or any type of bread you want to serve the pulled pork in

Instructions

  • Preheat the oven to 300 degrees.
  • Season the pork ribs with salt and pepper, and place in a large roasting pan.
  • Mix the first 8 ingredients together {honey through ground ginger}. Pour the sauce over pork ribs in the pan.
  • Roast the meat until it is tender enough to shred with forks - about 2 -3 hours. Remove the pork from the pan and shred. Set aside in a bowl.
  • Pour the remaining sauce directly from the pan into a medium saucepan and bring to a simmer. Stir together the cornstarch and chicken broth until smooth, then pour into the simmering sauce. Cook until the sauce has thickened, whisking constantly – it only takes a minute or two.
  • Remove from heat and stir in the sesame oil.
  • Fill the flour tortillas with the shredded pork, top with the Asian slaw & then drizzle with the sauce to serve.
