Lunchbox Cakes

Ingredients

For the cake:

  • 1 ½ cups or 180g of flour
  • 1 cup or 198g granulated sugar
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 6 tablespoons or 85g butter softened
  • 2 large eggs at room temperature
  • ½ cup or 113g milk at room temperature
  • 2 teaspoons vanilla extract

For the frosting:

  • 8 tablespoons or 113g unsalted butter softened
  • 1 teaspoon vanilla extract
  • 2 ½ to 3 cups or 283g to 340g of confectioners' sugar
  • 2 to 4 tablespoons or 28g to 57g of milk

For decorating:

  • 2 6 inch cake pans
  • Spatula
  • Cake turntable optional
  • Pink food color
  • Daisy icing decorations

Instructions

To make the lunchbox cake:

  • Preheat the oven to 375°F.
  • Combine the baking powder, sugar, flour, and salt in a large mixing bowl.
  • Add the softened butter and mix until the mixture is crumbly.
  • Whisk together the eggs, milk, and vanilla in a separate bowl.
  • Add to the dry ingredients mixture in two additions, mixing well the wet and dry ingredients in between.
  • Scoop half of the mixture into one pan and the rest into the other pan.
  • Bake the cupcakes for 25 to 30 minutes, until lightly browned.
  • Remove the Korean lunchbox cakes from the oven and let them cool in the pan for 5-10 minutes.
  • Gently remove them out of the pan and place them on a rack to finish cooling completely.

To make the lunchbox cake frosting:

  • In a bowl, mix the butter and powdered sugar at low speed with a spoon or an electric mixer. Add the vanilla and 1 tbsp of the milk and mix well.
  • Beat in just enough of the remaining milk to smooth out the frosting and make it spreadable, then stop beating. Add food coloring or gel if desired.

To decorate:

  • Prepare your frosting. You can add food gel or color to your frosting at this point.
  • Cover the bento cake with frosting using a spatula.
  • Add your decorations!
