Simple Mushroom Soup Recipe

- 1 tbsp olive oil
- 1 small onion finely diced (about ⅓ cup)
- 1 clove of garlic peeled and crushed
- 1 pound white or cremini mushrooms cleaned and quartered
- 1 tsp mustard seeds
- pinch of dried thyme
- 4 medium potatoes peeled and diced (about 4 cups)
- 2 quarts vegetable or mushroom broth
- 2 cups fresh or frozen green beans
In a 4 or 6 quart soup pot, warm the olive oil over medium heat.
Add the onion and garlic, and sauté until the onions are softened and fragrant, about 5 minutes.
Add half of the mushrooms, the mustard seeds, and thyme. Continue to sauté, until the mushrooms just start to brown,
about 8 minutes.
Add the remaining mushrooms, potatoes, and broth to the pot. Simmer until the potatoes are tender, about 15
minutes.
Stir the green beans into the pot, and cook just until they are tender, 3-5 minutes.
Serve with garlic bread or grilled cheese triangles.
