Strawberry Lemon Popsicles

Ingredients

  • 1 Cup Greek Yogurt
  • Zest of one Lemon
  • ½ lemon squeezed for juice
  • 1 cup strawberries hulled and minced
  • popsicle mold
  • **Optional Extra Strawberries for the inside of the popsicle mold**

Instructions

  • Combine Greek Yogurt, Zest of one lemon, ½ lemon squeezed for juice and 1 cup of strawberries minced in a bowl. {You want the strawberries minced so that you don't have huge chunks of strawberries for younger children to chew}.
  • Place thinly sliced strawberries on the outside of the popsicle mold if desired.
  • Fill the popsicle mold with the yogurt mixture.
  • Freeze for at least 6 hours.
  • In order to get the popsicles out of the mold without pulling the stick out, run hot water on the outside of the mold while pushing the popsicle out from the bottom {almost like milking a cow}. I swear it works!
