Heat a medium non-stick frying pan over medium-high. Add 1 teaspoon oil, then garlic, chili powder, cumin and salt. Stir until fragrant, 30 sec. Add tomato paste, carrots, bell pepper and green onions. Cooking for 5 minutes. Crumble in turkey. Cook, breaking meat up with a fork, until it’s no longer pink, 4 to 5 min. (I used ground turkey breast so there was virtually no fat but you may have to drain off any excess fat at this point. Ask your butcher to grind it up for you.)
Add spinach and zucchini, cook for 2 minutes, remove from heat.
Turn broiler on.Spread tortilla chips out on baking sheet. Spoon turkey mixture over, then sprinkle with cheese.
Broil in top third of oven just until cheese melts, 1-2 minutes. min. Serve topped with lettuce, sour cream, tomato, green onion and cilantro.
