One of my absolute favorite snacks are Energy Bites or Balls because they are the perfect bite size and they’re packed with so many amazing ingredients. I love that I can pack them for a quick pick me up at my desk or even grab one right before heading to the gym. Plus, there are so many different options. These Blueberry & Lemon Energy Bites are definitely one of my favorites and they were done in ten minutes.

Blueberry & Lemon Energy Bites
I’ve fallen head over heels in love with my lemon essential oil and I’ve started incorporating it into recipes because of the burst of flavor that it gives. I actually use it everyday in my water and I have to tell you that it is definitely helping to curb my snacking cravings. Plus, it is so easy to use. No need to zest a lemon. Just drop 2-3 drops of lemon essential oil in and you’re good to go. It’s that simple! Plus, if you scroll to the bottom, you’ll see the amazing deal that I am promoting for the month of February! Not only am I having a love affair with my lemon essential oil, but I’m also in love with my Nutri NINJA Duo Blender with Auto IQ. I cannot begin to tell you how much use this Blender gets. I use it every morning for my smoothies where I simply throw my fresh fruits and veggies whole into one of the Nutri Ninja Cups and the extractor blades go to work. I don’t need to worry about pushing buttons multiple times either. I literally pop it on and push the Nutri Ninja Ultima Blend button and it’s done in 30 seconds. The auto IQ technology just does it’s magic. Not only do I use it for smoothies, but I’ve also started using it as a food processor for my energy balls. It’s quick and easy. Plus, clean up is a cinch since the cups and blender is dishwasher safe and BPA free.
The interesting thing about this recipe is that I’m not normally a huge fan of blueberries. I made these with the intention of giving them to Avery because that child will eat blueberries until she is blue in the face. I took one bite of these though and I was hooked. The dried blueberries made these absolutely amazing!
- 8 oz dried blueberries
- 2-3 drops of lemon essential oil
- 1 cup old fashioned oats
- ¼ cup slivered almonds
- ¼ cup flax seed
- 2 tablespoons honey
- In a food processor or blender combine all of the ingredients and blend to create a paste.
- The paste should be able to be rolled into tablespoon size balls.
- If it is not forming a thick enough paste, add more honey.

An edible essential oil will be labeled “therapeutic-grade” and have a “Supplement Facts” box on the label showing the nutritional value – do NOT use just any brand of essential oil for cooking/flavoring foods. Be sure to use pure oils from reliable sources, not synthetic scents or flavorings.
