Here are some tips for making a delicious and healthy chicken rice bowl:

  1. Use high-quality ingredients: Start with fresh, high-quality ingredients, such as organic chicken, whole-grain rice, and fresh vegetables. This will ensure that your chicken rice bowl is not only tasty but also packed with nutrients.
  2. Marinate the chicken: Marinating the chicken in a flavorful marinade can add a depth of flavor to the dish. You can use a simple marinade made of olive oil, lime juice, garlic, and herbs or a more complex one based on your taste preference.
  3. Cook the rice properly: Properly cooked rice is essential for a good chicken rice bowl. Use the correct rice to water ratio and follow the instructions carefully. Make sure to rinse the rice before cooking to remove excess starch and fluff the rice with a fork once it's cooked to separate the grains.
  4. Include a variety of vegetables: Add a variety of vegetables to your chicken rice bowl to increase the nutritional value of the meal. You can include carrots, bell peppers, green beans, kale, broccoli, or any other vegetable of your choice.
  5. Add a flavorful sauce: Adding a flavorful sauce can bring all the ingredients together and make the dish more enjoyable. You can use a homemade sauce made of Greek yogurt, lime juice, and spices, or a store-bought sauce such as sriracha or soy sauce.
  6. Customize to your preference: The beauty of a chicken rice bowl is that it's highly customizable. You can adjust the ingredients, portions, and flavors to your liking, making it a great meal option for any palate and dietary preference.

Total Time: 45 minutes minutes
Servings: 4 people

Ingredients

  • 2 boneless skinless chicken breasts
  • 2 cups cooked rice white or brown
  • 1 avocado sliced
  • 1 lime cut into wedges
  • ¼ cup chopped fresh cilantro
  • ¼ cup chopped red onion
  • Salt and pepper to taste
  • Olive oil

For the marinade:

  • ¼ cup lime juice
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 garlic clove minced
  • ½ tsp cumin
  • Salt and pepper to taste

Instructions

  • In a small bowl, whisk together the ingredients for the marinade until well combined.
  • Place the chicken breasts in a large resealable bag and pour the marinade over the top. Seal the bag and turn it over several times to coat the chicken evenly. Let the chicken marinate in the refrigerator for at least 30 minutes, or up to 4 hours.
  • Preheat the grill or a grill pan to medium-high heat. Remove the chicken from the marinade and discard the remaining marinade. Season the chicken with salt and pepper to taste.
  • Brush the grill or grill pan with olive oil, then add the chicken breasts and cook for 5-6 minutes per side, or until cooked through and no longer pink in the center.
  • Once the chicken is cooked, let it rest for a few minutes, then slice it into strips.
  • To assemble the rice bowls, divide the cooked rice evenly between four bowls. Top each bowl with sliced chicken, sliced avocado, chopped cilantro, and chopped red onion. Squeeze a lime wedge over each bowl before serving.
