If you've been following along with Appetizer Week, then you've already seen my Pulled Pork Sliders and Empanadas Mini Pies. We're all about the variety of choices of meat when it comes to any sporting event food. So, to round it all out, I've put together our Buffalo Chicken Sliders. These are so easy to put together and once again are the perfect bite size since they are on slider rolls. Plus, they add a little heat to the party!
Buffalo Chicken Sliders
The reason I love these for a party is because you can make the chicken ahead of time and just have everyone assemble their own. Otherwise, if you let them sit for too long, the roll is going to get soft and mushy from the hot sauce and blue cheese dressing.
I do love a good messy slider though, don't you? My tip is to prepare the cooked chicken ahead of time. I have a tendency to forget and the quickest method for us is poaching. I just let it simmer in boiling water and Italian seasoning while I run around and chase my girls.
- 2 cups cooked chicken shredded
- ½ cup butter
- 12 oz Red Hot Sauce
- Blue Cheese Dressing
- Slider Rolls
- Over medium-high heat, melt the butter in a skillet.
- Add the cooked chicken and red hot sauce to the pan and coat the chicken with the sauce.
- Serve the chicken on top of slider rolls with a dollop of blue cheese dressing on top.

Messy sliders are definitely my favorite and these look delectable--especially with the buffalo sauce and blue cheese dressing 🙂

I was just on the Pots and Pans site, and that Veg-a-Peel looks awesome...I could definitely use a new peeler...mine gets heavy duty action with all the veggies we eat here!
