Caprese Kabob Appetizer

I have a huge love of Caprese as you've probably already noticed.  Remember my Caprese Burger?  I think my love of Caprese comes from knowing that the fresh basil comes from Riley's Toddler Herb Garden and she is so proud of those herbs.  She is also more willing to try things when she knows that it uses the ingredients from her garden.  This Caprese Kabob Appetizer is one of Riley's favorite because, like our Magic Wand Fruit Kabobs, she gets to help put them together.

In order to put these together you need 3 ingredients, fresh basil, mozzarella and tomatoes.  For these kabobs we used chopped plum tomatoes, but cherry tomatoes cut in half would work well too.  Plus, they would add a little sweetness to the kabob.  I feel it is essential though that you use fresh mozzarella.  There is just no comparison to the packaged kind {sorry mom}.   I asked Riley to create a pattern with the ingredients that would use our ingredients.  For each kabob, I placed 2 chunks of mozzarella, 2 pieces of tomato and 1 piece of basil in front of her with a skewer broschette.

The finishing touch for the Caprese Kabob Appetizer is balsamic vinegar, which you simply drizzle over the top.  The next time I make these I plan on making a balsamic reduction ahead of time because I learned a trick with balsamic reduction.  Did you know that by placing it in the refrigerator to chill the flavors actually combine more.  I usually use my balsamic reduction right away, but I was blown away by the flavor and texture when a friend refrigerated hers before serving.

A 4 ingredient appetizer that uses fresh ingredients straight from the garden.
Ingredients
  • Basil torn
  • Plum Tomatoes chopped {cherry tomatoes halved would work as well}
  • Fresh Mozzarella chunked
  • Balsamic Vinegar drizzles
  • Skewer Broschettes
Instructions
  1. Place ingredients on skewer broschettes and drizzle with balsamic vinegar.
