What makes these Quinoa Pizza Bites a Kid-friendly snack idea?

Eureka! I found it! A healthy recipe every single one of my 4 adorable, yet discerning kids like. And it's super easy to make! It's like finding gold! Hi, it's Erin from Suburban Simplicity. I wanted to share my secret for getting healthy nutrients into hungry kids - Quinoa Pizza Bites.

Over the years, I've tried a billion recipes that I think the kids will like, only to have a ton of leftovers that no one will eat. I literally thought I struck it rich the day every one of the kids thought this recipe was super good! The only other recipe they have all agreed on lately is this yummy Flatbread Pizza.

Maybe it's because it has the word Pizza in it. Who knows. It's a winner in our house.

Why is Quinoa a Superfood?

If you don't know quinoa the super food, let me introduce you.

Quinoa seeds {yes, it’s a seed, not a grain} contain all the essential amino acids like lysine and small quantities of calcium, phosphorus, and iron. Quinoa also provides small amounts of omega-3 fatty acid and fiber. It's also considered a complete protein...what other seed or grain can do that? Quinoa is gluten-free and easy to digest, so those with sensitivities can enjoy this one.

Ingredients:

  • Quinoa
  • Cheese
  • Parmesan cheese
  • Egg
  • Salt
  • Pepper
  • Garlic powder
  • Italian seasoning
  • Pepperoni

How to make Quinoa Pizza Bites?

With your left over quinoa, these Pizza Bites can be on the table in 20 minutes and only requires one bowl for prep. (That's my kind of recipe!)

Everyone loves pizza, right? So give this recipe for Quinoa Pizza Bites a try! Make it with pepperoni, add olives, or plain cheese and watch your kids gobble up the healthy, protein-packed goodness.

Ingredients

  • 1 cup cooked quinoa
  • ¾ cup shredded cheese
  • 2 tbsp Parmesan cheese
  • 1 egg
  • ¼ tsp salt
  • ½ tsp ground pepper
  • ½ tsp garlic powder
  • 3 tsp Italian seasoning
  • ½ cup chopped pepperoni

Instructions

  • Preheat oven to 400 degrees F. Grease 12 mini muffin tin pan.
  • Mix all of the ingredients together except Parmesan cheese.

  • Put a generous tablespoon into each muffin cup, packing them in.
    Bake for 12-15 minutes.

  • Remove from oven and top with 2 tablespoons of Parmesan cheese. Broil for about 1 minute.
  • After broiling, allow to cool on a wire rack for a few minutes and then remove from pan.
    Serve with your favorite Marinara Sauce.
