Red Velvet Heart Cake Cookies

I just recently realized my love of Red Velvet recipes.  I seriously thought I wasn't a fan until a tried a couple recipes from our Red Velvet Collection.  So GOOD!  I thought it would only be fair that I created something for my girls that they could sink their teeth into and showed them a little love.  Our Red Velvet Heart Cake Cookies are the perfect Valentine day treat and they are super simple since they're made from red velvet cake mix.

Red Velvet Heart Cake Cookies

I made these in two separate batches because I need some new cookie sheets.  I have one cookie sheet that I absolutely love.  It's actually this one and I have the habit of only liking to use that sheet so it takes me a bit longer, but I know that my cookies are going to be baked to perfection.  Plus, when I made these cookies I didn't have any parchment paper so I was concerned that they would stick even though I lathered the sheet in coconut oil.   I definitely realized that I need to get some of these non-stick baking mats.  Regardless though, these were baked to perfection and it didn't matter that the edges stuck a little because I used my heart cookie cutter in the middle of the cookies so I lost the edges anyway.

When I set out making this cookie I was aiming to create a cookie that was the perfect size for my girls to eat.  I needed the perfect amount of filling that wouldn't give them a mouthful of sugar.  I went with a simple cream cheese filling that was the perfect consistency for binding the two cookie halves together.

I could have easily rolled these cookies in a little confectioners sugar before popping them onto the baking sheet, but I knew that if I left them it would give them a deeper red color and the cracks that would give these red velvet cake cookies a little bit of character.

Red Velvet Heart Cake Cookies

Our Red Velvet Cake Cookies with a cream cheese frosting center is the perfect dessert for your sweet.

Ingredients

  • 1 box red velvet cake mix
  • 2 tbsp flour
  • 2 eggs
  • ¼ cup vegetable oil
  • 1 tsp vanilla extract
  • 4 oz cream cheese at room temperature
  • ¼ cup unsalted butter at room temperature
  • 1 tsp vanilla extract
  • 2 ½ cup confectioners sugar

Instructions

  • Preheat the oven to 350 F. Line a baking sheet with parchment paper or coconut oil.
  • Mix together red velvet cake mix, flour, eggs, vegetable oil and vanilla.
  • Roll the cookies into tablespoon size and drop onto the cookie sheet.
    Bake 8 - 10 minutes.
  • Let the cookies cool for about 5 minutes so that they are still warm, but not too soft and use the heart shaped cookie cutter to shape the cookies.
  • To make the frosting cream together the cream cheese and butter that are at room temperature and add in the vanilla.
  • Add in the confectioners sugar one cup at a time.
    To assemble the cookies simply spread a decent glob of frosting on one cookie and place the top down on it.
