Whipped goat cheese and avocado breakfast toast is an elevated play on traditional avocado toast. Tangy goat cheese and luscious avocado are whipped into a creamy perfection and then spread on a crunchy piece of sourdough toast. Fresh peach and apricot slices lay on top and a drizzle of balsamic vinegar and sprinkling of micro greens are the cherries on top!

Good morning, Melrose Family readers! I hope you all had a wonderful weekend and are looking forward to a productive week ahead! It's hard to stay productive with the high temperatures and sunny skies, isn't it? I know that I struggle with this, and the only way to get me going in the morning is with the perfect breakfast.
Anyone who knows me well enough, knows that I'm basically obsessed with breakfast foods. I definitely used to struggle with eating breakfast every morning. I would never make time for it, or I would just downright forget about it. It is terrible. I know. I had to start forcing myself to eat breakfast, otherwise I would be super cranky all day. I am a firm believer that it's the most important meal of the day!

My breakfast schedule improved dramatically with the discovery of avocado toast. Avocado toast is so versatile. It literally can just be a piece of toast with mashed avocado spread on top. A sprinkling of salt and black pepper and a drizzle of olive oil? That right there was my breakfast go-to, until I started making the splendid concoction of whipped goat cheese and avocado.
Avocado toast is super simple to prepare in the morning, which is why I think it has become so popular recently. This whipped goat cheese and avocado breakfast toast is an elevated version that can be served for breakfast, mid-day snack, or as a light and elegant appetizer. Don't have peaches or apricots on hand? Any fruit will do! Right now my latest obsession is fresh berries and watermelon, and that's what is so great about this recipe, you can alter it to meet your favorite tastes!

Whipped Goat Cheese and Avocado Breakfast Toast

Ingredients

  • 2 slices sourdough bread lightly toasted
  • 1 large avocado
  • 4 oz goat cheese room temperature
  • 2 tbsp olive oil
  • ½ tsp kosher salt
  • ½ tsp pepper
  • 1 large peach sliced
  • 1 apricot sliced
  • 2 tbsp micro greens

Instructions

  • To the bowl of your food processor or blender, add the avocado, goat cheese, olive oil, salt, and black pepper. Pulse until smooth, creamy, and whipped.
  • Spread the avocado mixture on the toasts. Top with fresh peach and apricot slices.
  • Drizzle the toasts with balsamic vinegar and sprinkle with additional black pepper if desired. Top with micro green and enjoy immediately.
