These cheesy mashed potatoes are super easy to make and compliment all your mains, right from your holiday meals to everyday dinner casseroles.

Why are Cheesy Mashed Potatoes so amazing?

There is only one word you need for answering this: cheese! Cheesy mashed potatoes are quick to make and taste delicious. Loaded with the goodness of cream, cheese and butter, they are like a warm cozy hug that everyone loves. Also, this recipe is so versatile; you can pair it with any vegetarian or meat dish and make a well-rounded meal.

🥘Ingredients

  • potatoes washed, peeled then cut into quarters
  • sea salt
  • cracked black pepper
  • butter
  • milk
  • mature cheddar cheese
  • finely chopped spring onion - optional
  • finely chopped parsley - optional

🔪How to make cheesy mashed potatoes

Prep work

  • Wash, peel and chop your potatoes.
  • Add the chopped potatoes to a large saucepan and cover with cold water.
  • Keep adding cold water to the pan until the potatoes are covered by at least an inch.
  • Then add salt to the water.

Cooking

  • Bring the pan to the boil, then reduce to a medium simmer and half cover with a lid.
  • Cook until the potatoes are tender for approximately 20 minutes; drain the potatoes in a colander and return them to the saucepan.
  • In a separate saucepan, heat the milk.
  • Using a potato masher, mash the potatoes until they are smooth.
  • Add the butter and the milk to the potatoes and stir vigorously.
  • Stir in the cheese and keep stirring until the cheese has been incorporated.
  • Then season with salt and black pepper.
  • Although this step is completely optional, garnishing with spring onion and parsley will give a burst of flavor.
