I grew up in a meat and potatoes household, but I was never a huge fan of meat.  Little did I know that it was because it wasn't cooked to my taste.  About thirteen years ago my husband opened my eyes in the early stages of our dating to the amazing flavor that a well cooked piece of meat can have.  Fast forward to now and I've come to understand that the type of meat you purchase also makes a huge difference.  This Herb and Garlic Crusted Roast is bursting with flavor thanks to the Certified Angus Beef® Boneless Rib Roast.

If you're anything like me you are a bit wary about cooking a roast.  It's normally a meal that we cook on special occasions like Christmas or Easter.  Therefore, I have a tendency to want to research the best temperatures to cook the meat at, as well as create the perfect recipe for it without overdoing it.

Certified Angus Beef® has made it easier than ever to do this.  Did you know that you can actually find exactly where to purchase Certified Angus Beef® at a retailer near you?  Try it HERE.   It's so simple and easy.  Plus, their new app, Roast Perfect, will even give you the directions on how to get to the nearest retailer.  Since I'm new to where we live this was huge for me.  I barely know the names of all the grocery stores since they are entirely different retailers then they were in NY.  The grocery store in our area that carried Certified Angus Beef® was the Lowes Foods and the butchers were so helpful when it came to choosing the perfect cut of beef.

You can download the Roast Perfect app from iTunes.  The app not only tells you stores and restaurants in your area where you can be sure to find Certified Angus Beef®, but it also gives you cooking instructions and recipes for each cut of beef.  Choosing a cut of beef is what confuses me the most.  The app makes it so simple though.  You simply choose the type of cut that is in your store, choose the amount of people that you're cooking for and the app will give you the cooking instructions.  You can then choose a recipe from their index or if you've decided upon a boneless rib roast then you can use ours.  With minimal ingredients and very little fuss it's the perfect recipe.

You can also find more inspiration on Certified Angus Beef® Roast Perfect Pinterest Board.  I'm more a visual person when it comes to cooking techniques and I have to tell you that Chef Michael from Certified Angus Beef® is one of my favorite chefs.  He's personable and fun all while showing you the perfect way to cook specific cuts of meat.  You can find him on Periscope, Youtube or HERE for step by step cooking instruction.  Plus, for inspiration check out Certified Angus Beef's Facebook, Pinterest, Twitter and Instagram accounts.  You can't possible have any excuses why you wouldn't know how to cook the perfect roast.  There's just too many resources!  Happy roasting!

An Herby & Garlic Crusted Roast that is perfect for any occasion.

Prep Time: 10 minutes
Cook Time: 2 hours
Total Time: 2 hours 10 minutes

Ingredients

  • 5 lb Certified Angus Beef Boneless Rib Roast
  • 2 tbsp melted butter
  • 2 cloves minced garlic
  • 2 sprigs thyme diced
  • salt & pepper

Instructions

  • Preheat the oven to 450.
  • Rub the melted butter over the entire roast.
  • Rub the minced garlic, rosemary & thyme over the butter.
  • Add salt & pepper to the entire roast to taste. Place on a roasting rack and roast for 20 minutes at 450.
  • After 20 minutes, turn the oven down to 325 and continue to roast for approximately an hour and a half for medium rare {120-130 F}.
  • Take the roast out and cover it and let it sit for 20 minutes before slicing.
  • Serve immediately with side of choice. We recommend garlic mashed potatoes and roasted carrots.
