Mac and Cheese Cups

Do you need a meal in your rotation for the kids that is a sure fire hit?  Look no further because these baked mac and cheese cups are a win every time.  Hi there, it's Jennie from The Diary of a Real Housewife.

Today I wanted to share with you a fun and new way to do mac and cheese. Mac and cheese is my oldest sons all time favorite recipe. I know most kids love mac and cheese so at his last birthday party we made these Baked Mac and Cheese Cups. You can eat it with your hands and they taste so yummy!

Baked Mac and Cheese Cups

Do you need a meal in your rotation for the kids that is a sure fire hit? Look no further because these baked mac and cheese cups are a win every time.

I can't lie, as much as I claim to be a "foodie" I still enjoy the simple kid food. I think we all do from time to time. The adults at his party really enjoyed them just as much as the kids did. Even though these Mac and Cheese Cups make a great party food I also make them for lunch.

It's actually pretty easy to sneak pureed veggies into them, and you can freeze them. Just make a big batch and after they have cooled place them each on a cookie sheet. Freeze like that so they all get frozen separately. Then toss them in a freezer baggy, and when you are ready for an easy lunch with the kids pop a few in the oven or microwave! Ta-da!

Start by making your favorite mac and cheese recipe or just use a box. Add 1 egg, sour cream, and mix. Fill a muffin tin with your mac and cheese.

Top each mac and cheese cup with a pinch of bread crumbs and a sprinkle of shredded cheese.

Now bake! Once they are done allow them to cool and then remove from the muffin tin.

Yum! Don't these look awesome. And if you are like my husband or my kids you can even dip them in ketchup. Anyone else do ketchup on their mac and cheese? Not me! I love these as is (or maybe with a little hot sauce!)

These Easy and amazing Mac and Cheese Cups make a great party food and your kids will love them too!

Ingredients

  • 1 box mac & cheese
  • ½ cup sour cream
  • 1 egg
  • 3-4 tbsp bread crumbs
  • ¼ cup shredded cheese

Instructions

  • Prepare mac and cheese according to the box instructions then place in a mixing bowl.
  • Add sour cream and egg to mac and cheese and stir. (If your mac and cheese is hot you will want to stir right away and quickly to make sure the egg does not cook before getting mixed well)
  • Fill a muffin tin by adding a spoonful of mac and cheese to each place. Top with bread crumbs and then shredded cheese (Just a pinch of each).
  • Bake at 350 degrees F for 30 minutes. Allow to cool and then remove from muffin tin.
