Pulled Pork Sandwiches

I have a slight confession to make.  Riley gets her dislike of meat from me.  I know, crazy right?  When I lived at home I ate whatever was for dinner.  I grew up having dinner as a family and one meal was cooked.  I’m so thankful for my parents instilling the importance of a family meal in me because I make sure that we sit as a family to eat dinner.  When I went away to college though, I hardly ever ate meat.  Even after college I hardly ate meat, until Joe cooked dinner for me for the first time.  He sent me to pick up steaks for dinner and I didn’t have the heart tell him I didn’t eat meat.  From that day forward, I knew my husband was the man I was going to marry and I ate meat without looking back.  One of our favorite meals to make is pulled pork sandwiches.  It is absolutely perfect paired with corn on the cob and potato salad.

1 pork butt or shoulder
salt & pepper
14 oz. beef broth
1/4 cup brewed coffee
3 cloves garlic
1 tablespoon liquid smoke
bbq sauce

Rub pork with salt & pepper.  Place in slow cooker and set on low for 8 hours.  Cover pork with all ingredients, except the bbq sauce.  After 8 hours remove the pork and shred it in a separate bowl.  Add bbq sauce and place on rolls.

    Ahhh!! I have the same problem:) Except I wasn't shy to tell my hubby that I didn't like meat!! Sabrina will only eat chicken, so unfortunately I think we are in the same boat! He would love love love this recipe thou! I have to find a crock pot…maybe at goodwill:)
