Are you excited for Fall yet? We certainly are! We had an opportunity to visit the local farm, Barton Orchards, for their Harvest Festival over Labor Day Weekend and we made sure to grab some apples. You probably realize by now that I have a thing for apples, whether it's for printables or recipes, I'm all about using them. I have a special connection to any kind of apple pie dessert, which is why we have cupcakes, mini pies, mason jar pies, energy bites and bread pudding. What?! I told you a love for apples. Okay, maybe an addiction, but did you notice that there weren't any cookies included in those recipes. We created a quick and easy Apple Pie Filling Cookie that is absolutely amazing and I promise it will not leave you disappointed!
Apple Pie Filling Cookies
We had an absolutely beautiful weekend over Labor Day Weekend and we took full advantage of it at Barton Orchards. I had found out during the Summer that the orchard is actually open during the Summer months and we took advantage of their abundant crops of blueberries, eggplant, and peppers. The farm is such a gorgeous place so when I heard that their Harvest Festival was happening and the apple orchard was open for picking I knew we had to go.
The best part is that the orchard offers more than just picking. The orchard also has a Fun Park, hayrides, a petting zoo as well as a Corn Maze that my girls and my nephews loved. I was struck by the beauty of it all. I don't know if it's just a matter of knowing that cooler Fall weather is around the corner or that we explored parts of the farm that I had never seen before, but it was a gorgeous day.
The Fun Park had bouncy houses as well as this slide, which Riley got scared by once she got up to the top. Luckily, my sister was all about climbing up there to go down with her. She's such a good sport!
They also had a train ride as well as this cow ride which was pulled by a tractor. The kids loved it and we literally would have spent all day there if we could have. There was just so much to do. Plus, it was perfect for even Avery {16 months} . We had come to Barton the previous year and only did the hayride and apple picking, but this was "the greatest day ever" in Riley's words. We will definitely be returning in the upcoming weekends to explore and play more. You can find information about the farm on Facebook, Twitter or Instagram.
When we got home, I knew I had to try out an apple pie filling cookie that was quick and easy. I relied on my mom's apple pie filling recipe and ended up with way more than I needed. You're going to LOVE what I used the leftovers for {Apple Pie Smoothie}. I'll have the recipe up soon, I promise!
The best part is that this recipe is quick and easy. I used Pillsbury Pie Crusts as the pie shells and added a heart shape cut out to the center of the pies. It's the perfect recipe for the kids or even to impress guests.

Apple Pie Filling Cookies
Ingredients
Filling
- 5-6 apples cored, peeled & chopped
- ¾ cup sugar
- 1 tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp salt
- 1 tbsp butter melted
Cookie
- Pillsbury Refrigerated Pie Crusts
Instructions
- Layout your pie crusts and use a cookie cutter to cut out the circles for the cookies.
- Lay the cut out cookies on parchment paper in order to be topped with the apple pie filling.
- For the apple pie filling combine the chopped apples, sugar, cinnamon, nutmeg, salt and butter in a medium bowl to combine.
- Scoop about a tablespoon of apple pie filling into the center of the cut out pie crusts.
- Cover the apple pie filling with another cookie cut pie crust. I also used a heart shaped cookie cutter to cut open the tops of the cookies.
- Use a fork to pinch the two pie crusts together to make a cookie.
- Sprinkle with cinnamon and sugar. Bake at 450 for 10 - 15 minutes
- This made sixteen cookies, which left me with leftover apple pie filling which can be used in numerous other recipes or canned for future use.
