In the last couple of months I have learned so much about who I am as a wife, mother, and woman. We all too often doubt ourselves as women. My sister recently welcomed her third child, but her first daughter, and we are over the moon excited about this little beauty. The timing is hard though, because her oldest starts kindergarten and her middle son starts preschool. I know she’s doubting herself and I like to bake for comfort so these Berry Blueberry Muffins are the perfect distraction.
Berry Blueberry Muffins
One of the reasons I immediately thought of these muffins when I thought of my sister is because as kids our favorite juice to drink was Minute Maid® Berry Punch. We’d come home from school and immediately look for a snack and a cold drink of Berry Punch to share our stories from school. My mom worked hard to get all of us to share a bit about our day. It was as if the punch was our elixir from the ups and downs of our day. The berry punch in these muffins make them perfectly moist and add in a bit more berry flavor.
I wish I could bring these muffins over to my sister and pour some Berry Punch so that she could share her woes. I know she’s doubting herself, and it’s so hard being so far from her since she’s still in NY and we’re in NC now. Back to school is stressful and emotional enough as you all saw from my letter to my kindergartner, but throwing a newborn into the mix just makes it more of an emotional battle.
I am thrilled though that Minute Maid® has put together such a fabulous back to school vibe with their “Doin’ Good” campaign that promotes moms and dads who are doing their best to give their most to their kids. Whether it’s spending a bit more time with homework help or just enjoying a family meal, we all need to realize the impact that we play on our children’s lives. You might have seen recently on my Periscope, Riley imitating me baking and creating her very own pretend video. Our kids are always watching and I bet if you asked them, they would say that you are an amazing parent. So stop doubting yourself and whip up these tasty Berry Blueberry Muffins for the perfect breakfast or after school snack.

Berry Blueberry Muffins
Ingredients
- ½ cup butter softened
- ½ cup sugar
- ¼ cup brown sugar
- 2 eggs
- ½ cup sour cream
- 2 tsp vanilla extract
- 1 ¾ cup flour
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- 4 tbsp Berry Punch
- 2 cup dried blueberries
Instructions
- Preheat the over to 425 F and prepare the muffin cups with baking cups. In a large mixing bowl mix together the softened butter and sugars {granulated & brown} until well combined.
- Add in the eggs, sour cream and vanilla extract and mix well.
- In a separate bowl combine the flour, baking soda, baking powder and salt. Slowly add in the dry ingredients until the batter combines.
- Mix in the 4 tablespoons of Berry Punch and then fold in the dried blueberries. Pour the batter into 12 baking cups and bake for 5 minutes at 425 F.
- After the first five minutes turn down the temperature to 350 F and bake for another 15 minutes.
