Strawberry crepes are made from a batter, which is similar to that of pancakes. The batter in this strawberry crepes recipe is made of eggs, milk, sugar, vanilla extract, and flour. They are easily combined until the batter is smooth.

  • Combine the ingredients in a bowl and whisk until smooth.
  • In a buttered non-stick pan or cast-iron skillet, add the batter, swirl it around the pan, and cook the crepes for a couple of minutes on each side.
  • Allow crepes to cool completely. Repeat with the remaining crepes.

  • Whisk the heavy cream until it is light and fluffy.
  • Add in the other ingredients and mix until combined.

  • It’s a good idea to have your softened butter next to the stove as you make the crepes. Each pat can be ½ tablespoon or 1 tablespoon, depending on the size of your pan. You can add another pat in between each crepe and wipe out the pan if any crepe residue begins to build up during the cooking process.
  • If you’ve made your crepes ahead of time, you can warm them in the microwave while stacked in between damp paper towels. The filling can be made when you’re ready to serve and you’ll still have a warm set of crepes!
  • You can always substitute strawberry preserves for dress strawberries when preparing the cream cheese filling. You can use about ½ cup strawberry preserves or as much as you want in your filling and will get the same end result.

  • 2 eggs
  • 1 ½ cups milk
  • 3 TBSP granulated sugar
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • Butter for the pan approx. 4 TBSP

Strawberry Cream Cheese Frosting

  • 1 cup strawberries rough chopped (plus more for serving)
  • 2 cups heavy cream
  • 6 oz. cream cheese softened
  • ½ cup confectioners sugar plus more for dusting, if desired

  • In a mixing bowl, combine the eggs, sugar, milk, and vanilla extract. Whisk in the flour until completely incorporated.

  • In a non-stick 6-7 inch pan or cast-iron skillet on medium-low heat, add a pat of butter and swirl the pan so the butter coats the bottom and sides.
  • Measure approximately ¼ cup of batter into the pan. Then, hold the pan and swirl the batter around until it covers the bottom of the pan (and up the sides a touch is ok too).

  • After about two minutes, gently turn the crepe over and cook on the other side for another 2 minutes or until golden on both sides. Remove the crepe onto some parchment paper to cool. Repeat with the remaining batter, making sure to add another pat of butter before drying each crepe.

  • Using a stand mixer or a hand mixer, whisk the heavy cream until stiff peaks form.

  • Then, add the cream cheese and confectioners sugar until just combined.
  • Now, add in the chopped strawberries and mix until blended in completely.

  • Spoon roughly ¼ cup of the strawberry cream cheese filling into the middle of each warm crepe. You can fold the crepes in half twice, or roll them up like a tortilla.
  • Top with sliced fresh strawberries. You can also drizzle additional strawberry cream cheese filling and/or dust confectioners sugar on top.
