- 1 cup strawberries rough chopped (plus more for serving)
- 2 cups heavy cream
- 6 oz. cream cheese softened
- ½ cup confectioners sugar plus more for dusting, if desired

- In a mixing bowl, combine the eggs, sugar, milk, and vanilla extract. Whisk in the flour until completely incorporated.
- In a non-stick 6-7 inch pan or cast-iron skillet on medium-low heat, add a pat of butter and swirl the pan so the butter coats the bottom and sides.
- Measure approximately ¼ cup of batter into the pan. Then, hold the pan and swirl the batter around until it covers the bottom of the pan (and up the sides a touch is ok too).
- After about two minutes, gently turn the crepe over and cook on the other side for another 2 minutes or until golden on both sides. Remove the crepe onto some parchment paper to cool. Repeat with the remaining batter, making sure to add another pat of butter before drying each crepe.
