Strawberry Lemon Popsicles

Avery is eating solid foods now, which also means that she gets to take part in all of the fun Summer treats.  I'm not sure who is more excited about that Riley or my dad. Grandpa loves feeding his grandbabies sweets and he is especially known for ice cream and popsicles.  In order to keep the popsicles a bit healthy, I'm giving a couple a try before true popsicles season hits here in NY. These Strawberry Lemon Popsicles are made with fruit and yogurt so it's a win-win! Get a Wet-Nap ready for some cleanup!

Strawberry Lemon Popsicles with Greek Yogurt

I love these popsicles because they're not only delicious, but they're also gorgeous. The strawberries around the outside of the popsicles just let you know that you're getting nothing, but fresh ingredients.  In order to get the strawberries around the outside like that, I just placed them on the wall of the popsicle molds before filling them with the yogurt mixture. They suctioned right to the sides.

My oldest, Riley, is not one for messes.  She doesn't even like getting her fingers dirty when she's finger painting.  I'm not making this up, I swear!  Notice how she's holding down Avery's hands while feeding her the popsicle?  She didn't want Avery touching the popsicle and then trying to touch her.

Clearly Avery doesn't have any issues with getting her hands dirty.  She grabbed right onto that popsicle and went to town.  Luckily, I took advantage of Walmart's everyday low prices and picked up a Wet-Nap pack to get ready for all of the Summer's messes.

Strawberry Lemon Popsicles
Recipe Type: Dessert

Serves: 6
A fun, yet healthy recipe for Strawberry Lemon Popsicles.
Ingredients
  • 1 Cup Greek Yogurt
  • Zest of one Lemon
  • ½ lemon squeezed for juice
  • 1 cup strawberries hulled and minced
  • popsicle mold
  • **Optional Extra Strawberries for the inside of the popsicle mold**
Instructions
  1. Combine Greek Yogurt, Zest of one lemon, ½ lemon squeezed for juice and 1 cup of strawberries minced in a bowl. {You want the strawberries minced so that you don't have huge chunks of strawberries for younger children to chew}.
  2. Place thinly sliced strawberries on the outside of the popsicle mold if desired.
  3. Fill the popsicle mold with the yogurt mixture.
  4. Freeze for at least 6 hours.
  5. In order to get the popsicles out of the mold without pulling the stick out, run hot water on the outside of the mold while pushing the popsicle out from the bottom {almost like milking a cow}. I swear it works!

    These look absolutely delicious! I love making yogurt pops for my kids to get a little extra calories and calcium into them, and who doesn't love strawberries?
