Banana & Avocado Popsicles

If there were two fruits that my girls could not live without on a daily basis it would definitely be bananas and avocados.  They seriously go through them like they're chocolate, which you've seen is also prevalent in my house {Chocolate Brownies Recipes}.  In order to balance the cupcakes with some healthy snacks, I created these perfectly Summer Banana & Avocado Popsicles.

Why you should make Banana Avocado Popsicles?

It's actually amusing to me how much my girls love bananas and avocados because they are two types of food that I dislike greatly.  I think it's the texture for me more than the flavor.  

Bananas and avocados were one of the first real foods that I ever gave my girls because you don't really need any teeth to be able to eat them.  Ever since then they've been hooked.  

Since popsicles are clearly all the rage for children during the warm weather, I wanted them to be able to enjoy them, but I also wanted to give them something a bit healthier.  The Banana and Avocado Popsicles are just that and they are the perfect warm-weather treat.

The great thing about these popsicles is that you need minimal ingredients as well as minimal supplies.  I use my Nutri Ninja Blender for just about everything that I can.  It doesn't matter if it's a smoothie or energy ball, I'm using it.  I also love our popsicle molds because they have a drip freeholder as well as a slurper straw, which definitely comes in handy with a messy toddler.

Tips for unmolding popsicles:

Here’s a quick tip for you if you’re using the plastic popsicle molds as I did. The best way to get them out is not to simply pull the stick and assume that they will slide out. Yep, I learned that lesson the hard way. The best way to get them out is to run the mold under warm water while pushing the popsicle out. The best way to picture this is to think of milking a cow. You’ll need to start on the opposite end of the handle and push down towards the handle.

Ingredients

  • 1 ripe banana
  • 1 ripe avocado
  • ½ cup Greek yogurt

Instructions

  • In a food processor combine all ingredients and mix until well blended.
  • Place the mixture into popsicle molds of your choice.
  • Freeze for at least 6 hours before removing them from the mold.

    We haven’t tried the popsicles yet, but my one year old liked the left over mixture as a smoothie! I was pleasantly surprised
